At Saint Bachis Roastery, we believe coffee is more than caffeine.

It is often the first quiet moment of the morning, shared around a table, warmth on a cold day, or savored at the end of one.

Because of that, we believe every cup should be worthy of your time.

That conviction shapes every decision we make, from the beans we source to the way each coffee is roasted, packaged, and prepared for your home.

Our goal is not simply to roast exceptional coffee, but to also preserve its integrity through the whole process so that what God created can be enjoyed as it was intended: as a beautiful cup.

Not defined by complexity or rarity, but by harmony; when aroma, sweetness, body, and clarity come together. Nothing feels forced, and nothing is missing. It invites you to slow down, not rush through. That is what we are working toward in every roast.


Preserving What Was Already There

Coffee passes through many hands before it reaches your cup, and every stage matters.

Harvest quality, processing speed, drying conditions, storage, transportation, and roasting all influence the final result. When handled poorly, coffee can develop defects, inconsistency, and unwanted oxidation.

Large-scale commercial roasting often compensates for this by roasting darker and faster to create uniformity. While effective for consistency, it can mask the coffee’s natural character.

We believe there is a better way.

By sourcing carefully selected coffees, maintaining traceability, and roasting each coffee according to its own characteristics rather than an arbitrary roast level, we preserve the sweetness, body, and balance already present in the bean.

Our role is not to impose flavor, but to faithfully reveal it.


Freshness Without Compromise

Every bag of Saint Bachis coffee is roasted fresh to order.

Instead of sitting for months in storage, your coffee is roasted specifically for you, then dated by hand so you know exactly when it was prepared.

Fresh coffee continues releasing carbon dioxide for several days after roasting. For this reason, we recommend allowing the coffee to rest for approximately ten days before opening. This natural degassing allows the coffee to develop greater sweetness, consistency, and clarity in the cup. 


Our Origins

These standards were not created in a boardroom, but rather through experience.

After years of navigating fertility challenges, my wife and I began reevaluating the way we lived and ate. We became intentional about the quality, sourcing, and integrity of the foods in our home, because what we did every day suddenly mattered in a much deeper way.

Today, we are incredibly grateful to have a beautiful and growing family, something that once felt uncertain. That season reshaped how we think about stewardship, health, and the impact of everyday choices.

Around the same time, I learned the traditional method of winemaking from my father, a craft passed from father to son through our Romanian family. The process was simple, but it required patience, discipline, and respect for what nature had already provided.

That philosophy stayed with me.

When we looked at coffee through the same lens, we realized that one of the world’s most consumed beverages was often treated with surprisingly little care. Sourcing was rarely transparent. Freshness was inconsistent. Quality often gave way to convenience.

So we began roasting for ourselves.

Then for our family.

Then for our friends.

And now, for you.

Every decision we make is guided by a simple belief:

The coffee itself deserves patience.
And the people who welcome it into their homes deserve something exceptional.

That is why we source premium Arabica coffees with known origins, roast each coffee in small batches according to its own character, prioritize freshness, and provide brewing guidance for every coffee we sell.

Our hope is that every bag becomes part of the moments that matter most.
